Pizza Wheels

  • 125g flour

    40g butter

    60ml milk

    60g cream cheese

    1 tbsp sweet chilli sauce

    20g grated cheese

  • In a bowl combine the flour and butter until it resembles breadcrumbs. Slowly add in your milk, saving a tsp to brush over your pizza rolls at the end.

    Roll your dough out flat. In a smaller bowl combine your cream cheese and sweet chilli sauce. Spread this cream cheese mix over your rolled dough before sprinkling over your cheese.

    Roll your dough by tucking in the end until you form a sausage shape. Cut this evenly into small circles.

    Brush over with your milk. Cook in the air fryer on 200 for 12-15 minutes or in the oven until cooked through.

Mini Quiches

  • 3 eggs

    60ml milk

    30g grated cheese

    Handful of vegetables

    Short crust pastry

  • Roll out your pastry and cut out circles. Place the pastry circles on a cupcake or muffin tray.

    Fill your pastry cases just short of half way with your vegetables.

    In a bowl combine your eggs and milk and whisk well.

    Pour your egg mixture over the vegetables, avoid spilling over the edge.

    Place in an oven at 200 for 10 minutes.

Mini Sausage Rolls

  • 500g mince (we used beef put pretty much anything will do)

    1 grated carrot

    1 grated courgette

    1 tsp oregano

    1 tsp paprika

    Sheet of puff pastry (or you can make your own)

    Egg white, whisked

  • In a bowl combine your meat, vegetables and spices.

    Lay out your puff pastry and cut longways in half.

    Take your meat mixture and roll into sausage shapes just off centre of the pastry, all the way down.

    Bring the longer side of pastry across the sausage meat and press the ends down. Cut into smaller sections.

    Brush with egg whites before placing in the air fryer for 15 minutes or in the oven at 200 for 18-20 minutes or until cooked through.

Oaty Energy Bars

  • You’ll need

    1 cup oats

    1 cup dried fruit

    1/2 cup honey

    1/2 cup PB

    1/4 cup butter

  • Gently melt your butter, PB and honey in a pot until well combined and runny.

    In a separate bowl combine your oats and dried fruit.

    Combine both mixtures.

    Press into a lined tin and place into the fridge, ideally overnight until solid.

    Slice and store wrapped in parchment paper.

Carrot Cake Doughnuts

  • You’ll need

    3 cups plain flour

    1 tbsp baking powder

    1 tbsp baking soda

    1 tbsp cinnamon

    1 tsp nutmeg or all spice

    1 cup brown sugar

    1 cup oil

    1 cup milk

    1 tsp vanilla extract

    3 cups grated carrot

  • In a bowl combine your flour, baking soda, powder, cinnamon and spices.

    In a separate bowl combine your brown sugar, milk, oil and vanilla extract. stir well.

    Combine both bowls before adding in your grated carrot.

    Spoon mixture into a doughnut mold and bake for 20-25 minutes on 160 degrees.

    For the glaze combine 2 tsp warm water and 1 cup of icing sugar. Drizzle over.

Strawberry Fro-yo bites

  • You’ll need

    1 cup chopped strawberries

    1 cup greek yoghurt

    2 tbsp syrup

    150g cooking chocolate (melted)

  • In a bowl combine your strawberries, greek yoghurt and syrup.

    Spoon into an ice cube tray and freeze overnight.

    When frozen, melt your chocolate and dip each piece in, covering well.

    The frozen yoghurt should set the chocolate but if you need more time to set simply pop them back in the fridge for a short time.
